Savoury meets fruity: finely cut carrots and spring onion greens are fried in a little olive oil before the apple pieces go in. Cumin and paprika add a pleasantly spiced note.
Meanwhile, the couscous simply soaks in vegetable stock. At the end everything is mixed together – a quick meal that tastes good both warm and lukewarm.

Instructions
- Bring the vegetable stock to the boil. Put the dry couscous in a bowl, pour over the hot stock, cover and leave to soak for about 5 minutes. Then fluff up with a fork.
- Wash and core the apple and cut it into small pieces. Grate the carrot or slice it thinly, and thinly slice the spring onion greens.
- Heat the olive oil in a pan. Fry the spring onion greens over medium heat for about 1 minute.
- Add the carrot, cumin and paprika. Fry briefly, stirring, until the carrot starts to soften.
- Add the apple pieces and fry for another 2–3 minutes. They should warm through but keep a little bite.
- Mix the couscous with the apple and vegetable mixture. Season with salt and pepper and serve.

Tips & Notes
For fluffier couscous, measure the vegetable stock according to the packet instructions.
Grated carrot cooks faster. Thin slices take a little longer, depending on how thick they are.
A sweet-tart apple makes a nice contrast with the spices. If you prefer it less sweet, use a tart apple.
The cumin is optional. If you have a sensitive palate, start with just a small pinch.
As a side dish, this makes about 2 smaller portions. For a bigger main course, serve it with extra cooked vegetables or a protein of your choice.
