Pumpkin gives a classic Bolognese a wonderfully autumnal touch: the cubes cook together with minced beef, celery and rosemary in a flavourful sauce. With wide ribbon pasta it makes an easy main course.
The quantities are enough for two servings. For four people, simply double all the ingredients.

Instructions
- Slice the spring onion greens into thin rings. Trim the celery and slice thinly.
- Wash the pumpkin, peel it depending on the variety and cut into cubes of about 1 cm. Strip the rosemary needles and chop finely.
- Heat the olive oil in a deep pan. Add the minced beef and fry, stirring, until crumbly and cooked through.
- Add the spring onion greens, celery and pumpkin and fry for about 5 minutes.
- Add the rosemary, vegetable stock and bay leaf. Season with salt and pepper and simmer gently over a low to medium heat for about 30 minutes until the pumpkin is tender and the sauce has thickened a little.
- Meanwhile, cook the ribbon pasta in salted water until al dente according to the packet instructions. Save about 100 ml pasta water before draining.
- Remove the bay leaf. Toss the pasta with the pumpkin Bolognese and add a little pasta water if needed. Serve with Parmesan and rosemary if you like.

Tips & Notes
Pumpkin: Hokkaido can be used with its skin on; butternut tastes especially mild and is usually peeled.
Consistency: Add the vegetable stock gradually if you prefer a less runny sauce – in the end the pasta should only be lightly coated.
Onion and garlic: If you tolerate them well, you can fry ½ finely chopped onion and ½ garlic clove with the pumpkin instead of the spring onion greens.
Meat-free: The minced beef can be replaced with a plant-based alternative; this changes the nutritional values.
Individual tolerance: With histamine intolerance, the freshness and storage of the mince are particularly important.
