Ingredients

  • 2 sweet potatoes large, cut into slices approx. 1 cm thick
  • 200 ml tomatoes passata or chopped, canned
  • 185 g tuna 1 can, drained
  • 250 g mozzarella 2 packs of 125 g, sliced
  • 3 tbsp olive oil for brushing and drizzling
  • salt to taste
  • pepper to taste
  • 1 clove garlic finely chopped
  • ½ tsp sugar to season the tomatoes
  • 1 tsp oregano dried
  • 1 bunch spring onion greens thinly sliced

Equipment

  • 1 baking tray
  • 1 mixing bowl small

Instructions

In the oven
  1. Prepare the sweet potatoes: Preheat the oven to 220 °C (conventional, top and bottom heat; 200 °C fan). Wash the sweet potatoes and cut them lengthways into slices about 1 cm thick.
  2. Pre-bake: Place the slices on a tray lined with baking paper, brush with about 2 tbsp olive oil and bake for about 20 minutes until almost soft. Depending on their thickness, check earlier.
  3. Season the tomatoes: Stir the tomatoes with the sugar, oregano, garlic, salt and pepper and adjust the seasoning.
  4. Add the topping: Slice the mozzarella. Spread the pre-baked sweet potatoes with the tomatoes and top with spring onion greens, mozzarella and drained tuna.
  5. Finish baking: Drizzle lightly with the remaining olive oil and bake for another 10–12 minutes until the cheese has melted and browned slightly.

Notes

The nutritional values depend especially on the size of the sweet potatoes, the tuna and the mozzarella.
