Sweet Potato Tuna Pizzas

Crispy sweet potato slices are topped with tomatoes, tuna, spring onion and mozzarella and baked. An easy alternative to little pizzas made with classic dough.

The sweet potatoes form the base. Pre-baking makes them soft and lightly browned; the cheese only melts during the second bake.

  • ½ tsp sugar to season the tomatoes
  • 1 tsp oregano dried
  • 1 bunch spring onion greens thinly sliced

Instructions

In the oven
  1. Prepare the sweet potatoes: Preheat the oven to 220 °C (conventional, top and bottom heat; 200 °C fan). Wash the sweet potatoes and cut them lengthways into slices about 1 cm thick.
  2. Pre-bake: Place the slices on a tray lined with baking paper, brush with about 2 tbsp olive oil and bake for about 20 minutes until almost soft. Depending on their thickness, check earlier.
  3. Season the tomatoes: Stir the tomatoes with the sugar, oregano, garlic, salt and pepper and adjust the seasoning.

Tips & Variations

Cut the sweet potato slices as evenly as possible so they cook at the same time.

For less moisture, drain the tuna thoroughly and pat the mozzarella dry before adding it.

Garnish with fresh basil or lamb’s lettuce, if you have some.

Air fryer: Lightly brush the sweet potato slices with oil and pre-cook them in a single layer at about 190 °C for about 12–16 minutes; check depending on the appliance and thickness. Then add the topping as above and bake at about 180 °C for another 5–8 minutes. Work in several batches.
